• Habitat: Saltwater. Available from January to October, peaking from July to October with the fishery closed for most of December.
• Flesh: Translucent when raw and white when cooked. The shell turns bright orange when cooked. A soft, moist texture and medium flavour.
• Size: 10-15cm/0.5-1.2kg
 Mud Crab MUD CRAB
• Habitat: Estuarine. Available year round with peaks from January to April in Queensland and NSW.
• Flesh: Translucent when raw and white to off-white when cooked. The shell turns red when cooked. A medium to firm texture, with a medium to strong flavour.
• Size: Commonly about 17cm in carapace width and 500g-1kg, but can grow to 28cm and 3kg
